I posted about this on my Instagram feed (are we friends?) and had a few people PM and one comment to share the recipe, so here you go!
This was a hit for the WHOLE family AND is #dairyfree #keto #paleo #primal and anti-inflammatory (for most!).
Spicy Avocado Chicken Soup
1.5 lbs boneless skinless chicken thighs
1 TBSP coconut oil
1 medium onion
2 jalapenos seeded and minced (leave seeds for extra spice)
2 cloves garlic minced
50 ounces of bone broth
2 Roma Tomatoes seeded and diced
½ tsp ground cumin
6 TBSP fresh lime juice
3 medium avocados, diced
Fresh cilantro to taste
INSTRUCTIONS (this can be done in a saucepan, but why not put it in the crock?)
Sauté peppers and onions over medium heat, until tender (about 2 min) adding garlic during last 30 seconds.
Add to crockpot.
Add bone broth, tomatoes, cumin, season with salt and pepper to taste.
Bring to a boil over medium-high heat. Then reduce heat to medium and allow to cook stirring occasionally.
Cook on high for 4 hours (or until chicken is cooked thoroughly) and then reduce to warm.
Remove chicken from crockpot and let rest, pull chicken with 2 forks to a shred and return to crockpot.
Add avocados and fresh cilantro to individual bowls while serving.
